fall baking: apple cinnamon bran muffins


I wanted to bake something that was nutritious but also delicious that I could eat on the go as a new mommy and these were perfect! And what says fall like a crisp apple?! I know when you think bran you do not always think delicious, but I promise you these will not disappoint. The original recipe calls for walnuts and raisins which I didn’t add but you can definitely mix it up with your own! The link to the original recipe is below.

APPLE CINNAMON BRAN MUFFINS
Ingredients
2 CUPS WHEAT BRAN
2 CUPS WHOLE WHEAT FLOUR
1 TSP BAKING POWDER
1 TSP BAKING SODA
2 TSP CINNAMON
1 1/4 CUP MILK
1/2 CUP MOLASSES OR HONEY
1 TBSP CANOLA OIL
3/4 CUP APPLESAUCE
1 EGG BEATEN
1 LARGE DICED APPLE

Directions
Preheat oven to 400°F. In a large bowl, combine wheat bran, flour, baking soda, baking powder and cinnamon. In a separate bowl, blend applesauce, milk, molasses, oil, egg, and vanilla. Add to dry ingredients and stir just until moistened. Batter will be a little lumpy. Mix in the diced apple. Grease muffin tins with cooking spray or place paper liners. Spoon batter into tin and bake for 15-20 minutes, until a toothpick inserted in the center comes out clean. Remove from tins to cool.
