These are one of my favourite holiday treats! I made a fairly large batch of them for a cookie swap, which is such a festive and fun idea for a holiday get together with friends! Everyone brings a dozen of their favourite holiday cookie per person. And you leave with a selection of holiday baked goods to enjoy. I extended the bake times from the recipe source, I found they needed a little longer especially if you add walnuts.

THUMBPRINT COOKIES
Ingredients
1/2 CUP BUTTER SOFTENED
1/4 CUP PACKED BROWN SUGAR
1 EGG
1/2 TEASPOON VANILLA EXTRACT
1 CUP ALL PURPOSE FLOUR
1/4 TEASPOON SALT
2/3 CUP FRUIT JAM
1/4 CUP FINELY CHOPPED WALNUTS (OPTIONAL)

Directions
Preheat oven to 300 degrees F. Separate egg, reserving egg white. Cream butter, sugar, and egg yolk. Mix in vanilla, flour and salt. Shape dough into balls. Roll in egg white, then walnuts. Place on cookie sheets about 2 inches apart. Bake for 6 minutes. Remove cookies from oven. With thumb, dent each cookie. Put jelly or preserves in each thumbprint. Bake for another 15 minutes.

I had really wanted to share my cute Easter cupcakes, but sadly didn’t get around to it! The fiancé has wanted some banana bread for a while now so I pulled out my favourite recipe from Company’s Coming. I love having fresh baked goods in the house for breakfast!

COMPANY’S COMING BANANA BREAD
Ingredients
1/2 CUP BUTTER – SOFTENED
1 CUP GRANULATED SUGAR
2 EGGS
3 MASHED RIPE BANANAS
2 CUPS ALL-PURPOSE FLOUR
1 TSP BAKING SODA
1/2 TSP BAKING POWDER
1/2 TSP SALT
1 CUP WALNUTS (OPTIONAL)

Directions
Cream butter and sugar together. Add eggs, one at a time, beating until smooth. Blend in mashed bananas. In second bowl, stir flour with baking soda, baking powder, salt and nuts. Add to banana mixture stirring only to moisten. Transfer to greaded loaf pan. Bake in 350 degree oven for about 1 hour, or until a toothpick inserted in the center comes out clean. Let stand 10 minutes. Remove from pan and place on cake rack to cool. Wrap to store.
